Whole30 — Avocado Toast Recipe

Whole30 can be a challenge to finish. Many foods are excluded from your options when preparing a meal. Bread is off-limits in many diets. While Whole30 isn’t considered a weight-loss “diet”, it also excludes bread. Whole30 avoids gluten, grains, and preservatives making bread a particular no-no. Those restrictions make traditional avocado toast impossible.

Fortunately, Whole30 also breeds creativity. You can keep avocado “toast” in your Whole30 diet with a minor tweak using sweet potatoes as a substitute for bread. Below is a quick explanation of my Whole30 recipe for Avocado Toast.

Ingredients (4 slices)

1 large sweet potato
1 ripe avocado
2 eggs
Everything spice

Pre-heat your oven to 425 degrees.

You’ll generally want sweet potatoes that are on the larger side. I wash and dry the surface, but I leave the skin on. You’ll want to cut them lengthwise ideally about half the width of a piece of bread. They can be tough to cut through so use a sharp knife and watch your fingers.

Place the sweet potatoes flat on a lightly oiled cookie sheet. I line it with aluminum foil first to avoid some mess. Bake the sweet potatoes for 15–20 minutes. You should be able to lightly stick a fork through them when they are done. I like them a little crispier and will often turn up the heat to 475 or broil them for 5 minutes at the end of cooking.

While the sweet potatoes are cooking, you can prepare the avocado and eggs. I like my eggs poached with a slightly runny yolk. You may have your own way to poach eggs or want them hard-boiled or scrambled. I use a microwave-safe dish, placing the eggs in and filling the bowl with enough water to cover the eggs by 1/2 inch. Microwave times will vary, but my microwave takes 4.5 minutes for 2 eggs. When the eggs are finished, replace the warm water with cold water and put in a few ice cubes and let the eggs sit a few minutes before pealing.

While the eggs are cooking or sitting, prepare the avocado. A ripe avocado is one that you can lightly press and feel some give in the skin. I like the avocado slightly mashed. I’ll cut it in half with a dull knife and remove the pit, then cut into cubes while still in the skin. You can also mash it up slightly with a fork right there. You can scoop it out into a bowl as well if it is easier to mash. Some might like to add a little salt to the avocado mash. I typically find there is enough salt in the everything spice.

When you plate the dish, flip the sweet potato over to put the firmer side on the bottom. Spread about a quarter of an avocado on each piece. Top it with half of a poached egg. Finish it with a sprinkle of the Everything But The Bagel spice.

What you have is a tasty bread-free, gluten-free, and preservative-free Whole30 alternative to Avocado Toast. Enjoy!
